4 top tips for a successful Törggele evening

A very old alpine custom is the Törggelen.

The “Törggelen” is an old custom here in the Alps and goes back to the tradition of farmers and wine merchants who used to taste the young wine together in the autumn season. The name derives from the word “Torggel” (Latin torquere), the grape presses in the winepress room. The wine was tasted in the wine press room and the evening ended in a convivial atmosphere in the “Bauernstub’n”.

This is how a perfect Törggele evening succeeds:

1. a traditional Törggele menu:

a. Gerst’l soup

The evening traditionally starts with a Gerstlsupp’n.
Preferably, you should make the Gerst’lsuppe a few hours before your big night. The longer it simmers, the creamier it becomes. In our country it is customary to cook a rolled ham with it.

b. Tyrolean slaughter plate

A hearty main course to enjoy:
A traditional Tyrolean slaughter platter includes a spicy roast pork, rolled ham, boiled potatoes, bread dumplings and creamy sauerkraut.
To make the somewhat rich dish a little more “digestible”, we recommend that you season the roast pork and the sauerkraut with caraway seeds.

c. Siaße Krapf’ln

To top it all off, you’ll be served delicious, sweet doughnuts. These are filled with cucumber filling (dried pear-poppy seed filling) or also cranberry or powidl jam and then baked out in fat.
As a “light” alternative, you could also prepare the sweet doughnuts with puff pastry and bake them in the oven at 180 °C until golden brown.

It is especially important to choose the right chestnuts: Be sure to buy “chestnuts” of the highest quality. Compared to chestnuts, chestnuts are sweeter & larger, have a more intense flavor and are easier to peel.
Carefully cut the skin of the chestnuts crosswise on the thick belly side with a sharp fair. Caution: Do not cut into the flesh of the fruit, otherwise the chestnuts can no longer be peeled.
Place them on a baking tray and roast the chestnuts for 20 – 25 min at 200 °C top and bottom heat (not hot air, otherwise the chestnuts will dry out).
Now you enjoy the chestnuts together with good friends with a glass of wine.

 

4. a good red wine

Of course, you can serve one of the South Tyrolean red wines on your Törggele evening – quite traditionally.

The Zweigelt is an Austrian breeding from Blaufränkischem and St. Laurent from the 1920s. Currently, about 1/3 of the Austrian wine-growing area is planted with red wine varieties. Zweigelt is the grape variety that is grown most often.
