Grandma’s delicious nut croissants . by Augarten Hotel Neustift

Springtime is yeast dough time. Today we present you an incredibly good family recipe that hotel chef Helga always bakes for her 3 boys in spring. Of course, the hazelnuts must not be missing. These not only taste delicious. They are also filling and very healthy.

 

What makes hazelnuts so healthy?

  • Hazelnuts are rich in vitamin E, antioxidant that binds free radicals in the body that would otherwise attack the cell walls.
  • The vitamin B content is also considerable – especially B7 and B1 – which supports the nerve cells. That is why nuts are also considered brain food.
  • In addition, they also have a high content of minerals, such as copper, iron, magnesium and phosphorus, as well as potassium, selenium, calcium and zinc.
  • The unsaturated fatty acids lower LDL cholesterol levels, which prevents cardiovascular disease.

How do I prepare “Grandma’s nut croissants”?

Ingredients (for 12 croissants):

Ingredients for the dough:

  • 500 g plain flour
  • 250 g butter
  • 2 pkg. Dry ferment (yeast)
  • 1 pinch salt
  • 50 g granulated sugar (the healthy alternative: birch sugar)
  • 3 eggs
  • 6 tablespoons milk
  • 1 egg for coating

Ingredients for the filling:

  • 200 g grated hazelnuts
  • 70 g granulated sugar
  • 7 tablespoons milk
  • 1 tablespoon rum
  • Cinnamon (according to taste)

 

Preparation of the nut croissants:

For the nut crescents, put the flour, softened butter (30 minutes before preparation from the refrigerator), yeast, salt and granulated sugar (or birch sugar), as well as the 3 eggs and the milk in a bowl. Mix the ingredients with the dough hook in the food processor until a smooth dough (first for 2 min at low speed, then for 8 min at the highest speed). Now cover the dough with a tea towel and let it rest in a warm place for 45 min.
While the dough is resting, you can prepare the filling in the meantime. To do this, put the grated hazelnuts in a saucepan and roast them at low temperature until you notice the wonderful smell of nuts.
But be careful: Stir the hazelnuts regularly with a wooden cooking spoon, because they turn black very easily!
Then add the sugar, milk, rum and cinnamon and stir at low speed until the mixture is firm. Finally, preheat the oven to 200 °C with hot air.
After resting, roll out the dough on a wooden board to the thickness of the back of a knife so that the dough has a round shape. Now divide the dough into 12 “pizza slices” and place about 1 tablespoon of nut filling on the “broadside” of each slice. Finally, roll up the cuts toward the point and place on a baking sheet. Brush the nut crescents with an egg and bake them for 25 min at 200 °C.
