The history of Kaiserschmarren: a sweet misadventure becomes a legend

Although numerous legends surround the origin of Kaiserschmarren, they all have one thing in common: the Austrian Emperor Franz Joseph I, who loved this dessert more than anything.
Here is our favorite story about the origins of Kaiserschmarrens:
The emperor was known to have a great fondness for pancakes, which were regularly prepared in the imperial kitchen. One day, however, the pastry chef had a little mishap. The dough was too thick and tore when he turned it.
In his haste to save the dessert after all, the pastry chef cut up the remaining dough and sprinkled it generously with powdered sugar. He then served the improvised dish to the emperor.
When the emperor saw the tattered dish, he asked in surprise: “Tell me, what kind of mess is this?” The shrewd servant promptly replied: “Your Majesty, it’s Kaiserschmarrn!”
And so a simple mishap became one of Austria’s most popular desserts, which continues to delight both locals and guests from all over the world to this day.

The perfect recipe for Tyrolean Kaiserschmarren

Here at the Berg Genuss Hotel Augarten, we are proud to serve our guests authentic Tyrolean cuisine. And what could be more authentic than a homemade Kaiserschmarren? Here’s our recipe so you can enjoy this delicious dessert at home:

Ingredients:

  • 4 eggs
  • 200 ml milk
  • 125 g flour
  • 30 g sugar
  • 1 sachet of vanilla sugar
  • A pinch of salt
  • Butter for the pan
  • Powdered sugar for dusting
  • Plum compote or apple sauce to serve

Preparation:

  • Separate the eggs: Place the egg yolks in a large bowl and the egg whites in a separate, fat-free bowl.
  • Prepare the batter: Add the milk, flour, sugar, vanilla sugar and a pinch of salt to the egg yolks. Mix everything well until you have a smooth batter.
  • Beat the egg whites: Beat the egg whites with a pinch of salt until stiff. Carefully fold the beaten egg whites into the batter until everything is well combined.
  • Frying: Heat a pan with butter. Pour the batter into the pan and fry over a medium heat until the underside is golden brown. Turn the pastry over and fry the other side until golden brown. After turning, reduce the heat by half and cover with a lid.
  • Tear: Tear the pancake into bite-sized pieces with two forks and fry again briefly in the pan.
  • Serve: Spread the Kaiserschmarren on plates, dust with powdered sugar and serve with stewed plums or apple sauce.
